Asian Tofu Kebabs

Soak some skewers in water for 20 minutes.   This is important or you'll land up with the sticks catching fire on the barbeque and then you won't have anywhere to hold them, will you?
Thread the vegetables, pineapple and tofu onto skewers. (You should have 12 kebabs).  
Lightly brush the kebabs with oil, then barbecue or grill them until lightly browned on both sides and cooked through.

As an option you can substitute chunks in this recipe for any of our Country Style sausages cut up into cubes. And if you add pineapple cubes to the skewer you can call them Kiwi Kebabs (if you really want.)

Ingredients

250G Bean Supreme Marinated or Firm Style Tofu, cubed
2 Baby Eggplants, sliced
2 Small Zucchini, sliced
½ Red Capsicum cut into 2 ½ CM chunks
½ Green Capsicum cut into chunks
250G Cherry Tomatoes
1 Tablespoon Oil
