Apricot Whip

This is thick and creamy and can be served as is, over fruit or breakfast cereal, or as a

topping for cakes or deserts.  Keep any leftovers covered and refrigerated.

Soak the apricots in juice for 1 hour or longer.  Or simmer in juice over low heat for 5 minutes.

Whizz fruit and juice in blender.  Add remaining ingredients and whizz again.  Add more juice

to thin as desired.  Many delicious combinations of dried and fresh fruit are possible.

Ingredients

1/2 cup chopped dried apricots

1 cup orande/mango juice

1 block Bean Supreme Tofu

1 ripe banana

2 Tablespoons honey

2 Tablespoons cold-pressed oil
