
Scrambled Tofu (Quality protein with minimal fat)
METHOD
Heat oil, add carrots, celery and cook until tender. Add garlic, ginger, onion and mushroom.
Cook until mushrooms are cooked through. Gently break(mash or cube) the tofu cake into the
pan and stir through breaking it further with a spoon to the desired consistency.
Add soy, sweet chilli and turmeric and cook for a further 2 minutes for the flavour to blend.
Season to taste and add tomatoes. Cook for 1 minute more and serve on crusty bread with
chilli sauce, parsley and spring onions.
Ingredients
300g Bean Supreme Organic Tofu
1 stick celery, finely sliced
1 tomato, cut into wedges
Half small carrot, finely diced
¼ onion, finely diced
4 button mushrooms, finely sliced
¼ tsp crushed garlic
1/4tsp crushed ginger
2 Tbsp sweet chilli sauce
11/2 tsp soy sauce
½ tsp turmeric
1 Tbsp oil
Salt & Pepper
Chopped parsley and spring onions for garnish
