Tofu Peanut Stir-fry with Chilli Mint & Satay Sauce

METHOD:
Place 1 Large wok on medium heat, Add oil, onions, carrots, puree & Chilli.
Cook untill onions are transparent. Add broccoli florets. Cook 3 mins. Toss wok 2 or 3 times whilst cooking. Add tofu & tamari, mix gently through & cook 3 mins. Add spinach & peanuts, toss till spinach just starts to wilt, add mint mix.

Serve stir-fry in shallow bowl, serve satay on top of stir-fry

Ingredients

Serves 4

1            packet Bean Supreme Marinated Tofu - ' Ginger & Honey', cubed

2            medium sized carrots peeled and finely sliced into ovals

1            large red onion peeled, cut in half, and finely sliced

1            head broccoli cut into small florets

2 or 3     bunches of spinach washed and roughly chopped

2 or 3     chillies finely sliced

2             tablespoons fresh mint roughly chopped

4             tablespoons olive oil

1             tablespoon ginger puree

3            tablespoons tamari / light soy

1 cup      lightly roasted peanuts

1 punnet Naked Organics Satay Sauce
