
Vege Sausage & Tomato Mash
Method:
Peel and cook the potatoes. Mash and season with pepper.
Finely chop onion and soften in a pan in a little oil. Add to potatoes with eggs. Mix until smooth and creamy. Stir in herbs and chopped sundried tomatoes.
Spoon mixture into a non-stick frying pan sprayed with a little oil. Cover over a medium heat for 5-6 minutes either side, or shape mixture into 4 patties and cook.
Meanwhile cook sausages in a non-stick pan. Cut potato in four, and serve with sausages and a mixed green salad.

1/2 cup sundried tomatoes in water
1 onion
2 eggs
1 packet (6) Bean Supreme Gourmet Sundried Tomato & Kalamata Olive Sausages
2 Tablespoons fresh herbs eg basil
5 large potatoes
